avoiding

I've not been doing a lot.

I have a lump in my breast(my mammogram is finally tomorrow), I quit at Wal-Mart and got my job back at Vowell's, I finally have a craft night tomorrow evening, had a crafternoon last week, and have met a lot of great people here recently. I went to the Soil and Conservation office last week with Josh, to talk to the USDA guy about his resources with community gardening and got a lot of leads, so I hope to look into those very soon.

I planted lettuce and potatoes so far for the fall. I planted 3 lettuce in the soil in front of my house, 1 lettuce in a large pot on my patio and 1 potato in the soil in front of my house. The lettuce in the soil aren't doing so well and it's because the soil has never been taken care of so it's lacking a lot of nutrients, the potato seems to be doing okay, it has some flowering. The lettuce in the pot is growing rapidly and I am very excited about it.
We haven't moved ahead on the beekeeping front, yet. A lot of financial stuff has come up here recently and we're strapped, but we're hoping to look into it soon.

This also means I can mark 2 things off of my list - craft night & yearly mammogram.

new things happening?

I gave a shot at making macadamia nut cheese last night. I haven't tried it yet but it looks like it turned out ok.

We got the OK to keep bees within the city limits, so that was pretty great. This morning I went out with Ethel and Jean and tended to our rescue puppies with medicines, picking up poop, playing, leash training and taking their pictures. This evening we had our S.C.A.R meeting at Ethel's home. It's breath painstakingly gorgeous! Her and her husband are currently re-doing the inside of it into all hard wood; the floors, ceiling, walls, everything! It's so great!

eep

Tonight was the first night of using baking soda and apple cider vinegar instead of shampoo and I think this is going to be a great relationship!

inky the clown's set up

I've consciously started getting off the couch and getting to the bed before 7Am(I fell asleep on the couch for about 3 months and would get up and go to bed when Josh got up for work) and I've been sleeping so much better and waking up so much more refreshed.
Thursday was my first meeting back with the animal rescue and it went really well. Tuesday & Thursday this week I am going over to one of the gal's homes that's fostering a good chunk of dogs, with another gal and we're going to work on leash training them and getting pictures of them for our Pet Finders page. I'm also, only because I was asked politely to, going to be writing an article(maybe?? -- she hasn't gotten back to me yet) on the animals we rescue for an online "newspaper" website.

Thursday afternoon we went to the community center to see Inky The Clown! It was a lot of fun. He threw me a free t-shirt because I was his Facebook friend.

i ate a lot of yummy food today

hearty breakfast
for breakfast I woke up early, washed my hair and put some turkey sausage, eggs & potatoes in a pan and let it cook. i had it with a glass of lemonade & some pita bread! that was yummy.
for lunch i had some home made blueberry jam on toast, and then for dinner i made potato leek soup. I'm bringing the rest of my artichoke & some potato leek soup for lunch tomorrow at work.
ARTICHOKE!
for an early midnight snack i ate an artichoke, rosemary toasted pita bread w/ a garlicky butter dip! I purchased some agave nectar because it looked yummy and I'd like to try it over some oatmeal or something!

Last night I tried to make beer bread but it didn't turn out. I think I forgot to put baking powder in it? I don't know!
failed attempt

Yesterday here in America it was the 4th of July. We attempted to go see fireworks but failed because my anxiety was getting the best of me so we didn't stay.

Sweet potato pancakes! and tomato facials!

sweet potato pancakes!!

tomato facial!

Today I went and washed some laundry and then hung them up in the backyard on the line to dry. We had some sweet potato pancakes(finally!) for dinner tonight.
There's some semi-local non-profit drama going on that breaks my heart, right now. A gal who is 9 years old and has muscular dystrophy is currently selling lemonade to raise money to go to camp this year. Well, she takes pre-orders, and then goes to different cities so that these people can pick them up. Well, she went to the Outlets at Vicksburg today, and they ran her off, after they had already been there for 3 hours while they were cleaning up to go. They posted some half assed "explanation" trying to justify what they did, but someone has even posted something about how the Miss Mississippi pageant has bake sales on their sidewalks all the time and nobody ever says anything to them. Ridiculous! Will not be spending ANY money there! I'm also so happy to see the uprisal about this. People have been flooding the outlet's Facebook page, and they've been deleting them if they don't praise them for what they did, but the gal posted everything that happened, and they're flooding the page again. Awesome!

Furthermore, we have a freezer full of corn on the cob and watermelon. Recipes? Suggestions?

local blueberries & lemonade for MD

fak'n pasta
This is the fak'n bits pasta I made the other night with mayo, cream cheese, frozen peas, fak'n bits, ditallini pasta & salt and pepper!

I posted earlier on my Facebook that I was going to pick up some frozen blueberries tonight to make blueberry jam tomorrow, and my pal Martha commented saying that her sister had just dropped off some blueberries from her land and that she would bring some by my house. She just brought them by! I told her the recipe called for 5 cups, she brought 10 cups! I'm going to freeze some, I think and then make jam with 5 of the cups.
local blueberries!
I'm clearly super stoked about them!

lemonade & blueberries
She also brought a gallon of Katelyn's Lemonade, I'm waiting for it to get cold before I try some.

kitchen bike
I rearranged the kitchen this evening. Lulu's mat & bowls are beside the oven now instead of by the fridge. I'm going to do a separate post about my new organization tooling for my cans/jars of pasta/boxed foods and things, maybe tomorrow.

busy weekend! I'll never catch up on sleep

signs

sign that i made

Yesterday was Mendenhall in May. We were well received by the community, with a lot of "Oh I didn't know Simpson County had an animal rescue!" and "We need this so bad!" among other exclamations. I'm glad that we were well received because it IS something that our county needs.

lots of energy

We had a lot of people also interested in the spay/neuter programs and thankfully we had literature to cover more emphasis on it.
We wrapped up about 3:30. Being there for oh golly..10 hours, was enough and the crowd had dispersed and everyone else was wrapping up. I got a ride home with one of the gal's after we dropped some stuff off at different places, and then I waited around a bit for the deputy to pick me up for my 2nd ride along through the citizen's academy. I couldn't keep my eyes open. We kept driving on back roads and going through the country, and once it got dark, I was done for. He wasn't much of the talking type, and nothing was coming across the radio so I asked him to just take me home. Josh had brought me some fried pickles and I went to sleep.

Today I worked for a few hours, went and did some laundry, misc grocery shopping and came home and made some pickles. Well, jarred them? I'm using a recipe that Martha Stewart has in her magazine, and it's FOR pearl onions & radishes but we'll see how it turns out.

making home made pickles!

The vendor next to us had all sorts of canned stuff that she had made, I chose to buy some home made pepper jelly. I used to see her in the market place when I worked there, she's such a nice lady! She even gave me a free sample of her Kentucky Poundcake. it was DELICIOUS!
Speaking of local stuff, one of our members brought all of us a bar of home made soap. My face got sunburned and so did my arms, so I used it on them and it was SO SOOTHING oh my gosh!

new S&P shakers
I also bought some new salt & pepper shakers :)

i have ginger snaps, but no almond milk. thanks josh.

i had some new potatoes, green bell pepper, yellow squash and raw green beans that were going to go bad soon and needed something to do with them. so i made lentil burgers & ginger roasted new potatoes & raw green beans. It was delicious. i had to make a quick run to the grocery store and when I came home, Josh was reading my newest issue of Martha Stewart. He followed me into the kitchen excited about zucchini pizza and shrimp salad. I'd really like to make this really soon.
I spent all day with my 2 loveliest furry ladies. Our resident spider has come out of his winter hiding and Olive Oyl is currently eyeballing him from the arm rest on the couch. He was here when we moved in, and he stays in 2 small holes that we have in the ceiling, but we don't bug him. he takes care of the bugs for us.

dinner

I have a lot to do tomorrow. i need to make the record bowl tier for Saturday, call a vet and try to get a letter of support and then I had my deputy ride along in the evening! I planted my straight neck squash & begonia flowers today. i arranged them nicely on the porch so that they would all get the proper/equal amount of sunlight.

I've stopped wearing make up for about 2 weeks now, and washing my face with a very soft soap since I finally finished off my Clinique purchases from the year before last. That was too much money spent to just go off and leave it in the cupboard. My face has freshened some and it's not as oily as it normally was. I just got lazy one day and didn't want to wear make up anymore.

Time for breakfast!

I've really been enjoying getting up before noon because of going to bed before midnight. I've done it the past few days and it feels really good. It's also making my pantry, fridge & freezer become emptier quicker because I am feeling inspired to make stuff for breakfast, lunch and dinner. Which is a good thing! We're overloaded right now and I keep just buying sides, veggies and staples.

this was my breakfast this morning. i woke up at 7:30, as josh was leaving for work so he didn't get to enjoy it with me.
breakfast this morning
red potato & sweet potato hash browns w/ some chocolate soy milk! Tonight I work until 10:30 so I'm really not sure what I'm going to make. I found out there's going to be a Farmer's Market at the street fair next weekend!
Sara just dropped off 8 planters! I need to figure out what's going to go in them & I need to light a candle so it doesn't smell like onions anymore in here.

120th post!

today was really good! I woke up early(8Am! Right after Josh left for work! Dag!) and lazed around for an hour or so, then headed into the kitchen. I made my first batch(EVER!) of pesto and I'm pretty proud of myself. i could have easily halved it for dinner tonight & refrigerated the rest of it, but I wasn't thinking. Oh well!

first batch of pesto!

I had to make some vegetable broth to go in the pesto, so I went ahead and made a bunch of it and froze it.

vegetable broth

My friend/co-worker who just moved down the road, Sarah, texted me because I had told her about a yard sale my other friend Sara(whose in the rescue with me) was having, so I went and picked up her and her husband to show them around town a bit. Well, we got to Sara's house and she invited us in and the rest is history. So, we have another date in the future soon to have me drive them around town to show them different places!

what i wore(and will wear later)today

I made dinner before we went to the Citizen's Academy so we had to eat real quick and then head out.
Dinner tonight!

We did finger prints at the academy this evening! The V.P of our rescue was there too. she was in it last semester, but I wasn't so she knows a bit more than I do. Next week, we tour the jail during class & the night before I am doing a ride along with a deputy(as long as they can find one for the times that I specified!)

Sara is dropping off a bunch of flower pots before I go to work tomorrow. I need to figure out what I want to plant! Bell peppers? Eggplant?
i'm chopping my hair off soon! I'm pretty excited about it. it's grown really long and I'm proud of it, but it has got. to. go! I tried to get Josh to cut it, but he didn't want to mess it up and I'm not comfortable enough to do my whole head so I guess I'm going to have to find someone to cut it for me!
